When you create an Eli’s Cheesecake, each detail is important; the texture,
taste and ingredients, but first, you have to build a crust.
At Eli’s, the crust comes first. We have a dedicated team of cookie bakers
who work through the night (our version of “In the Night Kitchen”) to bake the
cookie crusts that make our cheesecakes so distinctive. Whether it be the
shortbread butter cookie crust pictured below or our chocolate wafer crust, each
crust is mixed in small batches, sheeted into a cookie form and then baked in
our tunnel oven.
The next morning the crust is married with our batter to form that great
tasting Eli’s Cheesecake….made on a very special cookie.
