Eli’s Cheesecake Participates in the Inaugural Chicago Ideas Week with a Lab: “Eli’s Cheesecake’s R&D Chef-for-a-Day Experience”

On Thursday, October 13, Eli’s Cheesecake hosted 20 special guests for a Chicago Ideas Week Lab. Our goal was for our guests to learn about our operation and creative process and to then work with our research and development chefs to create their own custom cheesecake.

The lab began with a teambuilding experience and then an in depth tour of our Bakery to see how we make our desserts. Our guests then learned and sampled Eli’s quality ingredients and saw how they’re put together to form Chicago’s favorite dessert. All parts of the dessert development process were covered including mixing, baking, and decorating.

Finally, each small group worked as a team to use what they’ve learned to develop a brand new custom cheesecake flavor.  Each flavor was then reviewed by our pastry chefs and the “winning” flavor is now in production by our Bakers. Each guest will receive one of the “winning” cheesecakes and we will be selling a special Chicago Ideas Week Cheesecake at the Eli’s Cheesecake Café with  proceeds going to the Chicago High School for Agricultural Sciences.
